    Chocolate

    hey guys,

    Im after one of those nice big blocks of quality dark chocolate.. like the 5kg ones. I used to have a chef mate who got them for me but I cant get hold of him.

    I kinda expected to be able to search on the internets for 10min and find somewhere that will do it but I just keep finding places that do crappy /chocolates/ rather than pure unadulterated goodness type.

    hoping someone knows what I mean.. I guess there isnt much more I can describe :-/ just a place where I can order some absolutely top notice chocolate.. preferably from the comfort of my lounge. :-)

    No idea WHERE you can source them, but I know Callebaut make them. I used to work for Max Brenner and we had a stack of the 5kg blocks.

    Bibina, out of newcastle, do wholesale giant items. They have a website where you can see what they stock, then maybe call to see if theyll post down to sydney?

    Bibina is the best food wholesaler in NSW for food stuffs that no one else can source
    They supply mostly the restaurant trade but the public is also allowed to shop as well

    I am very confident that they have blocks of chocolate and in more than one brand and if you dont want 5 kg they have 2.5 kg *;)

    Just call my mate Andrew he is the manager and he will sort it out for you

    or, make your own:

    Lindt dark choc 85% cocoa, 1kg, broken into pieces into a stainless bowl, placed over a simmering pot of water (double boiling), whisk vigourously & add a tub of King Island rich cream (250ml) gradually while whisking, then add a slice of real butter (about 2tbsp), & keep whisking until combined.

    Then, when its thick, add some Trail Mix - the amount is your choice.

    Keep stirring, & pour on to either a greased or baking paper lined lamington type tray. Spread it evenly, then bung it in the fridge for an hour.

    The result ... [s]probably disgusting[/s] an absolute divine choccy heaven ;)

    I am looking at starting to make chocolate from scratch.

    I saw there was a thread about it on CS several years back, but it seems people really didnt get into it due to the need to buy a machine to process the sugar particles (and rest) down to the required size particles to not be chocolate flavoured sand.

    So I am wondering:

    1. Did anyone bight the bullet and buy the Santha wet grinder or similar? If so, how have you found it? Want to sell it? ;)

    2. I am also after sources to purchase cocoa beans and cocoa butter. Have found one, but would prefer many. Any suggestions?

    Travis, Im guessing the one you found is Tava as I dont think there are too many suppliers. Tava havent updated their website in quite some time so dont know whats going on there. Suggest you email Lang or Sam - theyre nice people!

    Alternatively, we could lobby Andy though I suspect that interest would be very limited.

    If you dont have any luck with the Sancha, I found that the addition of things like shredded coconut or slithered almonds are a great way of disguising that sandy texture.

    Yes, it is Tava that I came across. Although the website is out of date, someone did tell me they are still trading. I will email them and confirm soon.

    I would love to lobby Andy! Any interest out there snobs?

    I am still deciding whether to spend the money on the wet grinder...it is an awful lot. But on the other hand, I love this type of thing and use it as a release and a different use of my brain than my work...you could call it therapy :D. And if Im going to get into making something else...coffee is my favourite indulgence and am already roasting (and recently started experimenting with blending). Chocolate is my 2nd favourite indulgence...so chocolate it is!
