    Best brand for hot chocolate

    in your opinion, whats the tastiest chocolate youve tried for making hot chocolate at home for guests?

    had a few hot choc fans of late and all I can offer at the moment is cocoa powder mixed in with frothed milk :P

    I would imagine choc flakes would be the best for melting into hot milk.

    I got some Kali from another forum and have since seen it at some gourmet shops.

    Not sure where you are but try David Jones or if you are in Adelaide it is definitely at Lucias in the Central Market.

    Best chocolate.... buy far..... Valhrona, Michel Cluizel, Amedei or Cacao Barry.

    Cheaper good chocolate Felchin

    Get the high end chocolate around 64 to 72 percent and add sugar to favour. I just started using the Valhrona chocolate at the cafe and im really really happy. We use to have some single origins from Felchin and thats very good, but dont not compare to Valhrona. Valhrona single origin is one of the best chocolates. Only chocolate i have had better is the Michel Cluizel. Thats a really party in your mouth. Try it in the hot chocolate.

    Powder stuff we use Kali from Somage and African Red from Grounded pleasures.

    Im just chocolate mad at the moment.

    Does straight cacao (brand forgotten, about $60 / 100g somewhere on Sydneys east side) laced with chilli and whisked heavily into organic full cream milk count? Tasted rather rich, warming and sensual. Lotsa flavour and mouthfeel.

    I like the Valhrona Ive tasted but it was expensive. Is there anywhere you can get it in Melbourne for a good price?

    Ive been using lindt at the moment which is nice, or koko deluxe if Im in a hurry.

    Good chocolate at bean bay prices would be great :-)

    actually i might know someone who could get us some in brisbane coffee kid, if beanbay is to far away.

    Amedei rocks my world, I prefer it to Michel Cluizel and then Valrhona. Struggled to find it in stores in Melbourne
    The Felchin is ridiculously cheap. But great.
    Better than Callebaut dark ((which is another good cheaper brand)

    Powdered stuff, Valrhona. Sweetened to taste, is ridiculously intense and the flavour lingers long time.

    My regular hot choc drink is a combination of both block and powdered chocolate.

    Heston Blumethal has a cool recipe that produces a beverage with awesome mouthfeel, but not one that could be done everyday... time consuming prep, takes a toll on the electric beater and adds to ones electricity bill.

    Family Food (pg 301)
    500ml full cream milk
    100g dark chocolate (64% or more, but the best that you can afford)

    - On a medium-high setting, whisk milk for 45 minutes
    - transfer to a pan and bring to a boil
    - pour melted choc into pan, whisk to incorporate fully and serve.

    If anyone wants to buy some Valhrona at cost let me know and i will purchase some at the discounted price. Im planing to buy several single origins and bags really soon
    I have looked at Amedei for a while now. I emailed Italy last year trying to get someone to get it into Melbourne. I know a Sydney company has the rights to it.
    Simon Johnston has a great range of chocolate, however it is expensive.

    Felchin is sooo good and so cheap for what it is.

    wow, so many diff varieties....

    Koko black in melbourne sells some choc flakes but they are a bit pricey for the amount u get...

    where can I get my hands on some Felchin ? It sounds yummy and at an affordable price

    Count me in! Anything in the range. But I would especially like the big blocks (1kg??) that are used for cooking.

    I was in a chocolate mood today and just happened to be at Andrews cafe....the Valhrona was fantastic, wasnt expecting it but glad I got it - thanks!

    I had a lady come up to my Mobile Coffee Cart a few months back and she said that our Hot Chocolate was almost as good as Koko Black. At that stage I had never heard of Koko Black but was determined to try it and see how good it was. I was visiting Chadstone a few weeks later and saw their store and purchased one, I had a few sips and really enjoyed it, however once my wife tried it well lets just say I never got it back again. My regular hot chocolate was now only an 8-9 out of 10 and koko Black was a 10/10.

    Having been knocked off my Hot Chocolate perch, I had to know what goes into good Hot Chocolate and seeing how Koko Black start with Belgium Chocolate I tried to find some and did in the most unlikely place Coles Supermarket. Just last month Coles have released their Belgian Milk and Dark Chocolate 250g block range. The Dark chocolate is about 46% cocoa mass.

    So heres how to make a Hot Chocolate as Good as Koko Blacks:

    Start with Really Cold Full Cream Milk, add a good dollop of Cream (approx 70ml), add around 50gr of grated Coles Belgian Dark Chocolate then steam and Texture the Milk, Cream and Chocolate together under the steam wand. Heat to around 65-75C and poor into a warm cup, sprinkle some of the grated chocolate on top and serve (marshmallow are optional). Enjoy!

    Thats similar to what I do with good results:

    Get the high % (68% Belcolade is what I mostly use, easy to get and works well), chocolate buttons for making drinks or cooking with.
    Put desired amount in bottom of cup and melt. (I either use steam wand or the heat gun if it happens to be in the kitchen.)
    Steam up some milk for it quite a bit hotter than I do for coffee, but not so it burns. Texture wise about the same as the milk for a big latte.
    Pour in about 60-100ml depending on glass size, stir hard untill it turns dark brown. Then pour in the milk, even do some art if you wish ;).

    People seem impressed when you serve a hot choc that looks like a slightly different colored latte complete with a pic on top...

    Nice and quick, nothing additional needs to be used that requires cleaning etc... still takes less time than making a coffee.
