    Sourcing GDL Glucono Delta Lactone

    I am having trouble sourcing this ingredient and thought that Id give CSers a go in case someone has heard of it.

    Aside from the online sites, does anyone know anywhere in the Melbourne area I can get some GDL or Glucono Delta Lactone? Its used as a coagulant for tofu and in bread-making.

    Sounds silly but I am trying to make this asian dessert tofu (Tau Foo Fa) and cant find it anywhere.

    One recipe Ive seen uses cornflour and gypsum powder.

    1 Tbsp cornflour
    1/2 tsp gypsum * *
    1/4 cup water

    to 1L soy milk

    Another recipe uses agar agar.

    I tried gypsum but its not working all that well :( Heard GDL was used to make silken tofu and thought I could find it but its quite hard to get and expensive.

    Ill try gypsum again though.

    dontknow about putting gypsum in food.....

    should clean out the system nicely if it has the same affect it has on soil...

    to 1L soy milk
    I use a similar recipe for DAu Hu, hot bean curd dessert with ginger syrup as served in Yum Cha restaurants, *but I use 1tsp Gypsum and 1/4 cup rice flour. Rice flour is mixed with 1/2 cup of the soy milk and stirred in when the soy milk comes to boil.
    Gypsum is mixed with 2 tbsp boiling water. I paint the bottom of my bowl with a tsp or so of the gypsum mix, and then quickly pour the hot soy milk and the Gypsum into the pot at the same time ie Gypsum in one hand and Soy in the other. This mixes everything nicely. Cover and DO NOT MOVE bowl for 30 minutes. Thats it.

    Food grade Gypsum is available in little cellophane bags at Chinese grocery stores but be careful and check that the ingredients say Gypsum NOT Borax! I made an official complaint to the health dept about this two years ago and now find the stores I use sell Borax and Gypsum and Agar Agar in separate but similar bags properly labelled.

    Also if buying your Soy Milk make sure it is pure and contains only soy beans and water. Some brands work better than others as I think the water content varies.

    Now back to the coffee! ;)

    As it is plaster of Paris it might gum up the works if enough was consumed. Mix with icing sugar for cockroaches. It sets hard in their guts and they like, sorta lose interest in crawling around. Almost a reverse of an Underbelly concrete overcoat! ::) It is only acting as a acidifier in the tofu just like all the other coagulants that are used.

    Could never take to the stuff... But can understand why some do.... *After all, we are all different otherwise we would all have the same coffee machine and use the same beans.

    I could never bring my self to use the so called *packet / satchel whitener / cream that many use in their coffee. *Just powered stuff that hides / covers up the crap coffee..

    1: Common among the nondairy creamers is dipotassium phosphate (a powder used to moderate coffee acidity), and

    2: Sodium alumionosilicate: Known to potters as albite feldspar (a ceramic glaze and strengthening agent), sodium alumionosilicate is used in foods as an anticaking agent.

    Interesting and suggests why GJ and others do so well. Nothing to do with real coffee... Just interested in the additional crap that is added or used to hide bad coffee.

    Just FYI anyone who was interested - i am getting better results with store-bought soybean milk (rather than making my own from soybeans).

    Gypsum works great! so no need for GDL.

    The consistency depends a lot on the concentration of soy milk - hence its a lot easier to just go out and buy the bottle.

    Tofu is yummy! And like AM said, whatcha dont know...

    If you are prepared to drink the abomination that is commercially produced soy milk then tofus fine ;D

    Soy milk as per supermarkets and as bought at Asian grocers are different :)
