    how do you store your beans?

    This issue comes up from time to time and once I figure a good method of doing it someone else pull the idea apart. I am interested to see how other coffee enthusiasts store freshly roasted beans in order to keep them maximally fresh.

    Most recently I purchased a tinted container with a vacuum device on top which enables you to suck the air out. I notice this unit has been available in a number of coffee shops and the proprietor of the coffee shop advised me that this was the best way to store brands. Since then I have been told :-
    "dont store beans in a vacuum container.... it sucks out the carbon dioxide and the volatile oils from the beans.... both of which make the crema and add to the body and taste of the coffee.... "

    So what are the best and most convenient way to store beans while also keeping them maximally fresh?

    Yep, a vacuum is one of the enemies of roasted beans.

    There have been several threads on this (try search with time say 1 year)

    But to get you started:

    Basically a one way valved bag, in the back of a cool, dark cupboard is the way to go (and thats according to a professional barista trainer). Squeeze out as much air as you can each time you reseal the bag....

    And no fridge or freezer either...

    Most of these methods (except the one way valved bag) will prolong bean life (wont taste off) but at the expense of flavour and crema ... might as well drink instant!!!

    Thinking on it it also seems odd that many coffee shops that specialise in selling coffee beans have the sacks of open beans on display or alternatively a number have non-airtight being dispenses mounted on the wall in a fairly warm environment.

    It would suggest to me that beans stored in such a fashion could be stale from the moment purchase.

    Nope....

    Most were stale before they were even put on display....... some "speciality" coffee shops even sell flavoured coffee beans over 12 months post roast!!!

    They just dont know (or care!)
